Tender chicken thighs simmered low and slow in a sweet and savory honey garlic sauce, perfect for an easy and comforting dinner.

  • 68 bone-in, skin-on chicken thighs (boneless works too)
  • 1/4 cup honey
  • 1/3 cup soy sauce (low-sodium preferred)
  • 4 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 2 tablespoons ketchup
  • 1/4 cup water
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • 1 tablespoon water (for cornstarch slurry)
  • Sesame seeds (for garnish)
  • Thinly sliced green onions (for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels and season lightly with salt and pepper.
  2. In a medium bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, ketchup, water, and red pepper flakes until smooth.
  3. Place the chicken thighs skin side down in the slow cooker and pour the sauce evenly over the chicken.
  4. Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours until chicken is tender and cooked through (internal temperature 165°F / 74°C).
  5. About 30 minutes before serving, mix cornstarch with cold water until smooth and stir into the slow cooker to thicken the sauce. Cook on HIGH for another 20-30 minutes until sauce is glossy and syrupy.
  6. Remove chicken and place on a serving dish. Spoon the thickened sauce over the top and garnish with toasted sesame seeds and sliced green onions.
  7. Serve warm with steamed rice, quinoa, or roasted vegetables.

Notes

Use bone-in, skin-on chicken thighs for best flavor and tenderness. Fresh garlic is essential for the best taste. Adjust sauce thickness with cornstarch slurry near the end of cooking. Avoid lifting the slow cooker lid too often to retain moisture. For extra texture, broil chicken skin briefly before serving.
