  • 2 pounds boneless, skinless chicken thighs
  • 1 to 1 ½ cups pineapple chunks (fresh or canned)
  • ½ cup pineapple juice
  • ⅓ cup soy sauce (low sodium recommended)
  • ¼ cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • Green onions, sliced (optional garnish)
  • Sesame seeds (optional garnish)

Instructions

  1. Pat dry 2 pounds of boneless, skinless chicken thighs and place evenly in the bottom of the slow cooker.
  2. In a mixing bowl, whisk together ⅓ cup soy sauce, ¼ cup brown sugar, ½ cup pineapple juice, 3 minced garlic cloves, 1 tablespoon grated fresh ginger, and 1 tablespoon rice vinegar until sugar dissolves.
  3. Pour the teriyaki sauce mixture over the chicken evenly, then scatter 1 to 1 ½ cups pineapple chunks on top without stirring.
  4. Cover and cook on LOW for 4 to 6 hours or HIGH for 2 to 3 hours until chicken is fork-tender.
  5. About 20 minutes before serving, mix 1 tablespoon cornstarch with 2 tablespoons cold water to make a slurry. Stir into the slow cooker, cover, and cook on HIGH for 15-20 minutes until sauce thickens.
  6. Taste and adjust seasoning if needed. Garnish with sliced green onions and sesame seeds. Serve over steamed rice or noodles.

Notes

Use chicken thighs for juiciness. Do not skip the cornstarch slurry to thicken the sauce. Fresh garlic and ginger enhance flavor. For more caramelization, broil finished chicken 2-3 minutes. Substitute tamari for gluten-free option. Can swap brown sugar for honey or maple syrup. For vegan version, use tofu or tempeh and vegetable broth instead of pineapple juice.
