Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (155g) all-purpose flour
  • 1 cup (100g) finely crushed graham crackers (about 8 full sheets)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2428 chocolate football-shaped candies or chocolate kisses
  • 1 cup (about 60g) mini marshmallows (or cut regular marshmallows into small pieces)
  • 2 tablespoons (16g) all-purpose flour (for marshmallows)
  • 1/2 cup (60g) white chocolate chips or candy melts (for piping laces)
  • 1 teaspoon coconut oil or vegetable shortening

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Crush graham crackers finely using a food processor or by placing them in a zip bag and crushing with a rolling pin.
  3. Toss mini marshmallows with 2 tablespoons flour in a small bowl to prevent melting.
  4. In a large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy (2-3 minutes on medium speed).
  5. Beat in egg and vanilla extract until fully combined.
  6. In a medium bowl, whisk together 1 1/4 cups flour, crushed graham crackers, baking soda, and salt.
  7. Add dry ingredients to wet ingredients and mix just until combined.
  8. Gently fold in the flour-coated marshmallows, tucking them inside the dough as much as possible.
  9. Scoop dough into 1.5-tablespoon balls (about 28 cookies), roll each slightly oval to mimic a football shape, and place 2 inches apart on prepared sheets.
  10. Bake for 8-10 minutes, until edges are golden and centers are set but still soft.
  11. Immediately press a chocolate football or kiss into the center of each cookie.
  12. Let cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely (20-30 minutes).
  13. Melt white chocolate chips with coconut oil in a microwave-safe bowl (30-second bursts, stirring in between, until smooth).
  14. Transfer melted chocolate to a piping bag or zip-top bag, snip a tiny corner, and pipe laces across each chocolate ‘football.’
  15. Let the chocolate set (about 10 minutes) before serving or packing.

Notes

Coat marshmallows in flour and tuck them inside the dough to prevent melting. Don’t overbake—the cookies should look slightly underdone in the center when removed from the oven. Use gluten-free graham crackers and flour for a gluten-free version, or plant-based butter and dairy-free chocolate for dairy-free. Cookies can be made ahead and freeze well. If marshmallows burst out, press them back in while hot. Piping laces doesn’t need to be perfect for a festive look.
