  • 1 cup (175g) semi-sweet chocolate chips
  • Optional: ½ teaspoon molasses

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. In a large bowl, beat the softened butter with brown sugar and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, then pumpkin puree and vanilla extract until combined.
