Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes with an electric mixer on medium speed.
  4. Beat in the eggs one at a time, then stir in the vanilla extract until smooth and creamy.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Avoid overmixing.
  6. In a small bowl, mix the sugar and cinnamon for the coating.
  7. Scoop dough by rounded tablespoons (about 1 ½ tablespoons or 22 grams each). Roll each ball in the cinnamon sugar mixture until fully coated.
  8. Place dough balls about 2 inches apart on the prepared baking sheets.
  9. Bake for 8-10 minutes until edges are set and tops look slightly cracked but centers remain soft. Do not overbake.
  10. Let cookies rest on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
