Instructions

  1. Preheat your oven to 180°C (350°F) and grease your baking dish with butter or cooking spray.
  2. Place the chopped dates in a heatproof bowl and pour the boiling water over them. Stir in the baking soda and let the mixture sit for about 10 minutes to soften the dates.
  3. In a large mixing bowl, cream together the butter and light brown sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Using a blender or food processor, puree the soaked date mixture until smooth. Fold the puree into the batter until evenly incorporated.
  7. Pour the batter into the prepared baking dish and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. While the pudding bakes, prepare the toffee sauce. In a small saucepan, combine the light brown sugar, butter, and heavy cream. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles gently (about 5-7 minutes). Stir in the vanilla extract and a pinch of salt.
  9. Once the pudding is done, let it cool for 5 minutes before poking small holes all over the surface with a skewer or fork. Pour half of the toffee sauce over the pudding, letting it soak in.
  10. Serve warm with the remaining toffee sauce drizzled on top. Optional: add a scoop of vanilla ice cream or whipped cream for extra indulgence!
