  • 1/4 cup simple syrup (60ml, or substitute honey, agave, or sugar-free syrup)
  • 1 cup cold water (240ml, adjust for thickness)
  • 1 cup ice cubes (about 135g)
  • Pinch of salt
  • Garnishes (optional): sliced strawberries, lemon wheels, fresh mint leaves, or basil

Instructions

  1. Prep your ingredients: Juice lemons, zest one lemon, and measure out frozen strawberries, ice, and syrup. If using a small blender, halve the recipe and blend in batches.
  2. Add to blender: Combine frozen strawberries, lemon juice, lemon zest, simple syrup, cold water, ice cubes, and a pinch of salt in the blender jar.
  3. Blend until smooth: Start on low speed, gradually increase to high, and blend for 45 seconds to 1 minute until the mixture is thick and slushy. Scrape down sides if needed. Add more water if too thick, or more ice/strawberries if too thin.
  4. Taste and adjust: Taste the mocktail and adjust sweetness or tartness as needed by adding more syrup or lemon juice. Blend in extra ice for more frostiness if desired.
  5. Serve: Pour into glasses, spooning and swirling for a perfect slush. Garnish with sliced strawberries, lemon wheels, and a sprig of mint or basil. Optionally, rim glasses with sugar.
  6. Make ahead (optional): Freeze the mocktail mixture in ice cube trays. When ready to serve, blend cubes for instant frosé texture.

Notes

Use only frozen strawberries for the best slushy texture. Taste and adjust sweetness or tartness based on your fruit. Add fresh herbs like mint or basil for a gourmet twist. For parties, freeze the base mix in ice cube trays and blend with extra ice before serving. If the mixture separates, stir or re-blend.
