  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • Optional: A sprinkle of turbinado sugar

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease your baking dish.
  2. In a mixing bowl, combine the fruit, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Toss gently until the fruit is evenly coated. Pour the mixture into the prepared baking dish.
  3. In another bowl, whisk together the flour, sugar, baking powder, and salt. Add the melted butter, milk, and vanilla extract, and stir until a smooth batter forms.
  4. Pour the cobbler batter over the fruit filling. Use a spatula to spread it evenly, covering most of the fruit.
  5. Optional: Sprinkle turbinado sugar over the topping for extra crunch and sweetness.
  6. Bake for 40-45 minutes, or until the topping is golden brown and the fruit filling is bubbling around the edges.
  7. Allow the cobbler pie to cool for about 10 minutes before serving.
  8. Serve warm with whipped cream or vanilla ice cream.
