  • 2 pounds boneless, skinless chicken breasts (or thighs)
  • 1 (20-ounce) can pineapple chunks, undrained
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce (low-sodium preferred)
  • 2 cloves garlic, minced (or 2 teaspoons jarred garlic)
  • Optional: 1 medium red bell pepper, chopped
  • Optional: 1 tablespoon cornstarch (for thickening)
  • Optional: Green onions, sliced (for garnish)

Instructions

  1. Cut chicken breasts into large chunks (about 2-inch pieces).
  2. In a medium mixing bowl, combine pineapple chunks with juice, brown sugar, soy sauce, and minced garlic. Whisk until sugar dissolves.
  3. Place chicken pieces in the bottom of the crockpot. Pour pineapple sauce mixture over chicken, ensuring all pieces are covered.
  4. If using bell pepper or other veggies, sprinkle them over the sauce and chicken (add in the last hour for crunch).
  5. Cook on low for 5-6 hours or high for 3 hours, until chicken is fork-tender and sauce is bubbling.
  6. For a thicker sauce, whisk 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the crockpot during the last 15 minutes.
  7. Remove chicken with tongs and spoon extra sauce over the top. Garnish with green onions if desired.
  8. Serve hot over rice, quinoa, or veggies.

Notes

Use chicken thighs for extra juiciness. For gluten-free, swap soy sauce for tamari or coconut aminos. Add bell pepper or other veggies for color and crunch. Thicken sauce with cornstarch if desired.
