These no-bake energy bites combine peanut butter, oats, honey, and colorful monster cookie candies for a chewy, sweet, and slightly salty snack that’s quick to make and perfect for on-the-go.

  • ½ cup (130g) natural peanut butter (creamy or chunky)
  • ⅓ cup (113g) honey
  • ½ cup (90g) monster cookie candies (or substitute mini chocolate chips or M&Ms)
  • 2 tablespoons ground flaxseed (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ¼ cup mini chocolate chips (optional)

Instructions

  1. Measure out all ingredients: rolled oats, peanut butter, honey, monster cookie candies, ground flaxseed (optional), vanilla extract, salt, and mini chocolate chips (if using).
  2. In a large mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and creamy.
  3. Add rolled oats, ground flaxseed, and salt to the wet mixture. Stir gently but thoroughly until the mixture thickens and becomes sticky.
  4. Carefully fold in monster cookie candies and mini chocolate chips, avoiding crushing the candies.
  5. Using a tablespoon or small cookie scoop, form the mixture into 1-inch diameter balls, yielding about 20-24 bites. Wet hands slightly if mixture is too sticky.
  6. Place the formed bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  7. Transfer chilled bites to an airtight container. Store in the refrigerator for up to one week or freeze for up to three months.

Notes

Use room temperature peanut butter for easier mixing. Chill bites for at least 30 minutes to ensure they hold together well. Adjust peanut butter or oats if bites are too sticky or dry. For vegan version, substitute honey with maple syrup or agave nectar and use dairy-free candies. Store in airtight container in fridge up to one week or freeze up to three months.
