  • 1/4 cup packed dark brown sugar
  • 4 cloves garlic, minced

  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon onion powder (optional)
  • 1/2 cup chicken broth
  • A few sprigs fresh thyme or rosemary (optional)

Instructions

  1. Pat the pork loin dry with paper towels.
  2. In a small bowl, combine softened butter, brown sugar, and minced garlic until smooth.
  3. Sprinkle salt, black pepper, and onion powder evenly over the pork loin and rub in gently.
  4. Spread the garlic butter mixture all over the pork loin, pressing to adhere.
  5. Pour chicken broth into the bottom of the crockpot and add fresh herbs if using.
  6. Place the pork loin on top of the broth in the crockpot.
  7. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  8. Check that the internal temperature reaches 145°F (63°C) using an instant-read thermometer.
  9. Transfer pork to a cutting board, tent with foil, and let rest for 10 minutes.
  10. Optionally, spoon cooking juices and melted garlic butter over sliced pork before serving.

Notes

Searing the pork loin before slow cooking is optional but adds a nice crust and extra flavor. Use a meat thermometer to ensure the pork reaches 145°F for safe consumption. Let the pork rest after cooking to keep it juicy. Adding sliced onions or herbs in the crockpot enhances flavor. For dairy-free, substitute butter with olive oil or vegan butter. Adjust cooking time if your slow cooker runs hot.
