  • 2 cups beef broth, preferably low sodium
  • 1 large onion, sliced thin
  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 12 small hoagie or slider buns (or 6 hoagie rolls, sliced)
  • 2 tablespoons butter, melted (optional, for brushing buns)
  • 12 slices provolone or Swiss cheese (optional)

Instructions

  1. Trim any excess fat from the chuck roast and pat dry with paper towels. Season generously with about 1 teaspoon salt and ½ teaspoon pepper on all sides.
  2. Optional: Heat a large skillet over medium-high heat with a tablespoon of oil. Brown the roast on all sides until a crust forms, about 3-4 minutes per side.
  3. Place sliced onion and minced garlic at the bottom of the slow cooker. Add the seared roast on top.
  4. Pour in 2 cups beef broth and 2 tablespoons Worcestershire sauce. Sprinkle 1 teaspoon dried thyme evenly over the roast.
  5. Cover and cook on low for 8 hours, or on high for 4-5 hours, until the meat is fork-tender and easy to shred.
  6. Remove the roast to a plate and tent with foil. Strain the cooking liquid through a fine sieve into a saucepan. Bring to a simmer and reduce slightly for about 10 minutes to concentrate flavors. Adjust salt and pepper to taste.
  7. Shred the beef using two forks into bite-size pieces. Return shredded beef to the au jus to keep moist and warm.
  8. Optional: Brush the inside of the slider buns with melted butter and toast lightly in a skillet or oven until golden.
  9. Assemble sliders by piling shredded beef onto each bun. Add a slice of provolone or Swiss cheese if desired, then close the sandwich.
  10. Serve warm with au jus in small dipping bowls for dunking.

Searing the meat before slow cooking adds flavor but can be skipped for convenience. Keep an eye on the slow cooker temperature to avoid overcooking. For thicker au jus, whisk in a slurry of 1 teaspoon cornstarch and 1 tablespoon cold water and simmer until thickened.
