A tender, melt-in-your-mouth slow-cooker beef brisket enhanced with a bold coffee BBQ sauce that balances smoky, sweet, and tangy flavors for a comforting and easy meal.

Ingredients

Scale
  • 3 to 4 pounds beef brisket, preferably flat cut
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 cup strong brewed coffee, cooled (use a robust dark roast)
  • 1 cup BBQ sauce (smoky variety recommended, e.g., Sweet Baby Ray’s)
  • 2 tablespoons tomato paste
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • Optional garnishes: fresh parsley or chopped green onions

Instructions

  1. Pat the beef brisket dry with paper towels. Generously season all sides with salt and black pepper. (5 minutes)
  2. Place a skillet or cast iron pan over medium-high heat and add 1 tablespoon olive oil. Heat until shimmering but not smoking. (3 minutes)
  3. Sear the brisket in the hot pan, about 3-4 minutes per side until a deep brown crust forms. Use tongs to turn. (12-15 minutes total)
  4. In a mixing bowl, whisk together brewed coffee, BBQ sauce, tomato paste, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and black pepper until smooth. (5 minutes)
  5. Place the seared brisket into the slow cooker. Pour the coffee BBQ sauce evenly over the meat, coating well. (2 minutes)
  6. Cover and cook on low for 8 to 10 hours, or until brisket is fork-tender and falling apart. Avoid lifting the lid during cooking. (8-10 hours)
  7. Transfer the brisket to a cutting board and let rest for 15 minutes to redistribute juices. Slice against the grain into thin pieces. (15 minutes)
  8. Serve sliced brisket with some thickened coffee BBQ sauce spooned over. Garnish with fresh parsley or green onions if desired.

Notes

Searing the brisket before slow cooking is highly recommended to lock in juices and add flavor. If the sauce is too thin after cooking, simmer it on the stovetop to thicken. Avoid lifting the slow cooker lid during cooking to maintain temperature and cooking time. For gluten-free, verify BBQ and Worcestershire sauces. Optional: add cayenne or chipotle powder for heat, or molasses/honey for sweetness.
