  • 1 cup packed brown sugar (light brown sugar recommended)
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon ground cloves
  • 1/2 cup pineapple juice (or apple cider or orange juice as substitute)
  • 1/4 cup maple syrup or honey (optional)
  • 1/2 teaspoon garlic powder
  • Freshly ground black pepper to taste

Instructions

  1. Remove any packaging and skin from the ham if necessary. Pat dry with paper towels. Place ham flat side down in the slow cooker.
  2. In a medium bowl, whisk together brown sugar, Dijon mustard, ground cloves, pineapple juice, maple syrup (if using), garlic powder, and black pepper until smooth and glossy.
  3. Pour about half of the glaze over the ham, spreading evenly with a basting brush or spoon. Reserve the rest.
  4. Cover the slow cooker and cook on LOW for 4 to 5 hours until heated through and tender. Avoid lifting the lid frequently.
  5. About 30 minutes before the end, remove lid and brush remaining glaze over the ham. Cook uncovered for the last 30 minutes.
  6. Transfer ham to a serving platter and tent loosely with foil. Let rest for 15 minutes before slicing.

Notes

Patting the ham dry before glazing helps the glaze stick and caramelize better. Basting twice ensures a sticky, flavorful crust. Use a meat thermometer to heat ham to 140°F internal temperature. Rest ham before slicing to keep it juicy. If glaze is too thin before second basting, simmer briefly on stovetop to thicken. Avoid high heat to prevent drying out the ham.
