  • 1 cup (200g) packed brown sugar

  • 1 cup (240ml) pure pumpkin puree
  • 1 teaspoon vanilla extract
  • Optional: ½ cup (90g) chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. In a large bowl, cream the butter and sugars using an electric mixer or sturdy spoon until light and fluffy, about 3 minutes.
  4. Add the egg, pumpkin puree, and vanilla extract to the butter mixture. Mix until fully combined and smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in chocolate chips or nuts if using.
  6. Drop rounded balls of dough about 2 inches apart onto the prepared baking sheets.
  7. Bake for 12-14 minutes until edges look set but centers are still soft with a slight wobble.
  8. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

Notes
