A creamy, spicy, cheesy, and crispy sandwich that combines the tangy kick of jalapeño poppers with the gooey comfort of grilled cheese. Perfect for quick lunches or movie nights.

Ingredients

  • 2 slices sourdough bread
  • 2 ounces cream cheese, softened
  • 1/2 cup cheddar cheese, freshly shredded
  • 2 tablespoons jalapeños, sliced (fresh or pickled)
  • 2 tablespoons bacon, crumbled (optional)
  • 1 tablespoon butter, softened
  • 1/4 teaspoon garlic powder

Instructions

  1. In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, garlic powder, and sliced jalapeños. Stir until fully blended.
  2. Spread softened butter evenly on one side of each bread slice. This will be the outside of the sandwich.
  3. Place the buttered side down on a plate. Spread the cream cheese mixture onto one slice and top with crumbled bacon (if using). Place the other slice on top, buttered side up.
  4. Place your skillet over medium heat and let it warm up for a minute or two.
  5. Place the sandwich in the skillet and cook for 3-4 minutes per side, pressing gently with the spatula. Flip carefully to avoid spilling the filling.
  6. Your sandwich is ready when the bread is golden brown and crispy, and the cheese is fully melted.

Notes

For extra gooey cheese, cover the skillet with a lid for 30 seconds while cooking. Customize the spice level by using fresh or pickled jalapeños and removing seeds for less heat.
