  • 2 cups nacho cheese sauce (e.g., Velveeta)
  • 1 cup shredded sharp cheddar cheese
  • 23 fresh jalapeños, diced
  • 1 can black beans, drained and rinsed
  • 3 green onions, sliced
  • 1 medium tomato, diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Tortilla chips for serving (sturdy, thick chips like Mission or Tostitos)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat. Add ground beef and cook for 6-8 minutes, breaking it up until no pink remains. Drain excess fat if necessary.
  3. Sprinkle garlic powder, onion powder, smoked paprika, salt, and pepper over the beef. Stir well to coat evenly.
  4. Add diced jalapeños and drained black beans to the skillet. Cook for 2-3 minutes to combine flavors.
  5. In a mixing bowl, combine nacho cheese sauce and shredded cheddar cheese. Stir until smooth and well combined.
  6. Pour the cheese mixture into the skillet with the beef, jalapeños, and beans. Stir gently to combine.
  7. Transfer the mixture to an oven-safe baking dish and spread evenly.
  8. Bake for 15-20 minutes until bubbly and slightly golden on top.
  9. Remove from oven and sprinkle with sliced green onions and diced tomatoes.
  10. Serve immediately with sturdy tortilla chips.

Notes

If cheese sauce is too thick, add a splash of milk to loosen. Drain beef fat to avoid greasy dip. Use sturdy chips to prevent breaking. Can prepare beef and cheese mixture a day ahead and refrigerate. For vegetarian version, omit beef and add extra beans, corn, and bell peppers. Slow cooker adaptation possible by heating on low for 2 hours.
