A refreshing and visually stunning lemonade mocktail that changes color from deep violet-blue to pink when fresh lemon juice is added, combining subtle floral notes with bright citrus zing.

Ingredients

  • 1 tablespoon dried butterfly pea flowers
  • 2 cups (480 ml) water
  • 1/2 cup (120 ml) fresh lemon juice
  • 2 to 3 tablespoons sweetener (raw honey, simple syrup, agave, or maple syrup)
  • Ice cubes as needed
  • Optional: sparkling water for fizz

Instructions

  1. Bring 2 cups (480 ml) of water to a boil. Remove from heat and add 1 tablespoon of dried butterfly pea flowers. Let steep for 5 to 10 minutes until the water turns deep blue.
  2. Strain the tea using a fine mesh strainer or tea infuser into a pitcher. Set aside to cool slightly.
  3. While the tea is still warm, stir in 2 to 3 tablespoons of your preferred sweetener until dissolved. Adjust sweetness to taste.
  4. Pour in 1/2 cup (120 ml) of freshly squeezed lemon juice and watch the color shift from blue to purple-pink.
  5. Add ice cubes to the pitcher or pour the lemonade over ice in individual glasses.
  6. Optional: Top each glass with sparkling water just before serving and stir gently.
  7. Garnish with lemon slices or edible flowers and serve immediately.

Notes

Steep butterfly pea flowers in water just off the boil for 5-10 minutes for best color and flavor. Sweeten the tea while warm to avoid graininess. Add lemon juice slowly to watch the color change. Use fresh lemon juice for the most dramatic effect. For a sparkling version, add sparkling water just before serving. Store leftover tea base without lemon juice for up to 2 days in the fridge.
