  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons tomato ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon prepared horseradish
  • 1 teaspoon lemon juice, freshly squeezed
  • 1 teaspoon hot sauce (optional)
  • 2 tablespoons mayonnaise (light mayo or avocado mayo recommended)
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Fill a medium saucepan with water and bring it to a gentle boil. Carefully lower 4 large eggs into the water using a slotted spoon. Set a timer for exactly 6 minutes for soft-boiled eggs with slightly runny yolks. (Add 1-2 minutes for firmer yolks.)
  2. Once the timer goes off, immediately transfer the eggs to a bowl of ice water to stop the cooking process. Let them sit for 5 minutes before peeling.
  3. While the eggs cook, whisk together 2 tablespoons tomato ketchup, 1 tablespoon Worcestershire sauce, 1 teaspoon prepared horseradish, 1 teaspoon lemon juice, 1 teaspoon hot sauce (if using), and 2 tablespoons mayonnaise in a small bowl until smooth. Adjust seasoning to taste.
  4. Rinse and dry 4 cups of mixed greens thoroughly. Thinly slice 1 medium cucumber, halve 1 cup cherry tomatoes, thinly slice 1/4 cup red onion if using, and chop 2 tablespoons fresh cilantro.
  5. In a large salad bowl, combine the mixed greens, cucumber, tomatoes, red onion, and cilantro. Drizzle with 1 tablespoon extra virgin olive oil and season lightly with salt and pepper. Toss gently to coat evenly.
  6. Cut 1 ripe avocado in half, remove the pit, peel the skin off, and slice lengthwise into thin pieces. Arrange the avocado slices on top of the greens.
  7. Carefully peel the cooled soft-boiled eggs. Cut each egg in half lengthwise and nestle them into the bowl alongside the avocado.
  8. Spoon the prepared Nye Cocktails dressing over the entire bowl, or serve it on the side for dipping.
  9. Optionally, sprinkle a pinch of black pepper or a few chili flakes for extra flavor. Serve immediately.

Notes

Use room temperature eggs for even cooking. Start timing once water boils. Use an ice bath immediately after boiling to stop cooking and ease peeling. Keep dressing and avocado separate until serving to avoid browning. Peeling eggs under running water can help. For a heartier bowl, add toasted nuts or seeds. Adjust horseradish and hot sauce to control spice level. Worcestershire sauce may contain gluten; substitute with soy sauce or tamari for gluten-free.
