  • 1 tablespoon fresh lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon freshly cracked black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt (to taste)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Pat the tilapia fillets dry with paper towels to help seasoning stick and prevent steaming. (5 minutes)
  2. In a small bowl, combine lemon zest, freshly cracked black pepper, garlic powder, and salt. Stir well to blend. (2 minutes)
  3. Drizzle olive oil over both sides of each tilapia fillet. Sprinkle the lemon pepper mix evenly on both sides, gently pressing it in. Let fillets rest for 5 minutes to absorb flavors. (7 minutes)
  4. Heat a non-stick skillet over medium heat and add 1 tablespoon olive oil. Warm until shimmering but not smoking. (3 minutes)
  5. Place fillets in the pan without crowding. Cook for 3-4 minutes on the first side without moving the fish to get a nice sear. (4 minutes)
  6. Flip fillets gently and cook for another 2-3 minutes until fish flakes easily and reaches 145°F (63°C) internal temperature. (3 minutes)
  7. Remove fish from pan and drizzle fresh lemon juice over each fillet. (1 minute)
  8. Transfer cooked tilapia to a plate lined with paper towels to absorb excess oil. Let rest for 2 minutes, then garnish with chopped fresh parsley. (2 minutes)

Use freshly cracked black pepper for best flavor. Pat fish dry to ensure a good sear. Avoid overcrowding the pan to prevent steaming. Let fish rest after cooking to lock in moisture.
