A quick and flavorful taco bowl featuring seasoned ground beef, fresh veggies, and a homemade zesty ranch dressing. Perfect for Super Bowl parties and casual gatherings.

  • 1 lb (450 g) ground beef (85% lean)
  • 2 tbsp taco seasoning (mild blend recommended)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 head romaine lettuce, chopped
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 can black beans, drained and rinsed
  • 1 cup (150 g) sweet corn, fresh or frozen
  • 1 cup (100 g) shredded cheddar cheese
  • 1 ripe avocado, sliced
  • ¼ cup fresh cilantro, chopped
  • 1 lime, juiced
  • ½ cup (120 ml) mayonnaise
  • ½ cup (120 ml) sour cream
  • ¼ cup (60 ml) buttermilk
  • 1 tbsp ranch seasoning mix
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Zesty Ranch Dressing: In a medium bowl, whisk together mayonnaise, sour cream, and buttermilk until smooth. Add ranch seasoning mix, garlic powder, onion powder, chili powder, juice of half a lime, and salt and pepper to taste. Stir well and refrigerate.
  2. Cook the Beef: Heat olive oil in a large skillet over medium-high heat. Sauté diced onion for 3 minutes until softened. Add minced garlic and cook for 1 minute. Add ground beef, break it up, and cook until browned and cooked through, about 7-8 minutes. Drain excess fat if necessary. Sprinkle taco seasoning over beef, stir, and cook for another 2 minutes.
  3. Prepare Fresh Ingredients: Chop romaine lettuce, halve cherry tomatoes, drain and rinse black beans, measure corn, slice avocado just before serving, chop cilantro, and squeeze juice from remaining half lime.
  4. Assemble the Taco Party Bowl: Layer chopped romaine lettuce as base on a large platter or individual bowls. Spoon seasoned beef over lettuce. Scatter black beans and corn on top. Sprinkle shredded cheddar cheese generously. Add cherry tomatoes and sliced avocado around the bowl. Sprinkle chopped cilantro over everything.
  5. Drizzle with Zesty Ranch: Just before serving, drizzle chilled zesty ranch dressing over the bowl. Add a squeeze of fresh lime juice on top. Serve additional dressing on the side if desired.

Notes

Brown the beef well by letting it sit undisturbed for a couple of minutes before stirring to develop a nice crust. Use fresh lime juice for best flavor. Add ranch dressing just before serving to keep veggies crisp. Prep dressing and chop veggies ahead to save time. Slice avocado last to prevent browning. Leftover dressing makes a great dip and keeps refrigerated for up to a week.
